I love the idea of simple foods, and love eating food that brings me back to my roots. I grew up in a Mexican household, and two of the staple foods I ate were rice and beans. So, I wanted to share a recipe that embodies my determination to cook similar foods to the ones that I grew up with, while also adding my personal touch to it. This Fiesta Bowl is one of my favorites because it requires minimal effort, includes the food staples that I grew up with, and a lot of nostalgic love.
