I love the idea of simple foods, and love eating food that brings me back to my roots. I grew up in a Mexican household, and two of the staple foods I ate were rice and beans. So, I wanted to share a recipe that embodies my determination to cook similar foods to the ones that I grew up with, while also adding my personal touch to it.

I find that eating meals out of bowls is what I always prefer since I grew up eating a lot of my meals at home that way. This Fiesta Bowl is one of my favorites because it requires minimal effort, includes the food staples that I grew up with, and a lot of nostalgic love. This recipe is also so simple, yet delicious, and always brings me back to my roots!

  Fiesta Bowl

Prep: 6 minutes
Total Time: 25 minutes

Ingredients

Bowl:

  • 1/4-1/2 c cilantro rice
  • 1 yellow pepper cut into strips
  • 1 red pepper cut into strips
  • 1 can black beans (you can also sub for pinto if you prefer)
  • 1 avocado
  • Siete Foods Habanero Hot Sauce (amount of your choice)
  • Cilantro, chopped
  • Lime
  • Salt
  • Pepper
  • And a pinch of love 

Cilantro Rice:

  • 1 c jasmine rice
  • 2 c water
  • ¼ c cilantro, chopped
  • salt to taste

Instructions

  1. Combine 1 cup rice with 2 cups water in a pot. [Note: I usually start with cooking the rice ahead of time.]
  2. Add 1 tsp salt.
  3. Bring to a boil.
  4. Reduce heat, cover with a lid and simmer for 18-20 minutes.
  5. Remove from heat.
  6. Fluff with a fork.
  7. Add and stir in chopped cilantro until it’s all stirred in well.
  8. While waiting for the rice to simmer, heat pan on medium heat with avocado oil.
  9. Sautee peppers with salt and pepper until they are fully cooked (you can also cook them with chopped red onion for more flavor).
  10. Finally, heat up your beans.
  11. Once your rice and peppers are all cooked, you are ready to assemble your fiesta bowl!
  12. Start with cilantro rice as your base, then add beans, cooked peppers, avocado, Siete Foods Habanero Hot Sauce, squeeze of lime, cilantro, and add salt and pepper for more taste. Eat by itself or with Siete Foods tortilla chips (nacho is my favorite flavor), or make tacos out of the bowl with Siete Foods tortillas!
