I will never forget that memorable, hot, summer day when I first tastedaquachile on the beach with a local family. Everyone sitting around as they topped their chips with theaquachile, and a dash of hot sauce. I was hooked. I begged them to teach me, and they laughed saying “es muyfacil (easy)!” The next day, I went over to learn how to make it at my neighbor’s house, and have never looked back.

We had a eureka moment: Tortilla Ice Cream Bowls! Doubling as both a cone and a bowl in this summer treat, the tortilla in this recipe makes this recipe simple, sweet, and grain free. You’ll be sure to have all your guests screaming for more ice cream!

Inspired by Middle Eastern influence in Mexico City, Tacos al Pastor are traditionally made with slow-cooked, and thinly-shaved, shawarma-style pork. Our easy-to-make version, on the other hand, uses mushrooms in place of meat. It’s seared in achiote garnished with lime juice and grilled pineapple—bring this dish to any party, and you’ll be sure to go down as the funnest “fungi” (fungal?).

Maybe it’s because tacos are near and dear to our heart (not to mention how they always on our tip of the tongu—erm,...mind), but our Siete familia is delighted when tacos are used as a vehicle to bring foods from different countries together, on the plate, or in a dish.
